This means it must be stainless steel that is durable, easily cleaned and sanitized, and without grooves and porous areas that can trap particles and harbor bacteria growth.

Since food processing and foodservice equipment must be washed and sanitized very frequently, all surfaces must be totally smooth and polished.

Regulatory Organizations

The FDA (Food and Drug Administration), NSF (National Sanitation Foundation), and USDA (United States Department of Agriculture) are regulatory organizations that are responsible for keeping the food supply system safe and clean and holding operations accountable for the quality of the product they put out.

The FDA regulates what type of materials are allowed for contact with food, and sets standards for filters and other parts of equipment in food manufacturing. The NSF is a non-profit organization that sets standards for food manufacturing safety (as well as air, water, and environmental safety). Food manufacturing companies and those involved with municipal water treatment will often request NSF certification.
